  • 1 tbsp lemon juice
  • 1 tbsp extra virgin olive oil (or more if you want richer)
  • 1 garlic clove, minced
  • 0.25 tsp salt
  • 1 black pepper (to taste)
  • 3 tomatoes, deseeded and diced
  • 3 cucumbers, diced
  • 0.5 red Spanish onion, peeled and finely chopped
  • 0.25 cup fresh parsley leaves (optional)
  • 1 salt and pepper (to taste)
  • 4 to 6 pita breads or flatbreads

Method

  2. Cut cucumber in half lengthwise, remove and discard seeds, then coarsely grate. Squeeze out excess liquid using a towel.
  3. Place grated cucumber in a bowl. Add yogurt, lemon juice, olive oil, garlic, and salt. Mix to combine. Set aside for at least 20 minutes to meld flavors.
  4. Combine salad ingredients (tomatoes, cucumber, red onion, parsley, salt and pepper) in a bowl. Set aside.
  5. Brush grill with oil and preheat on medium-high, or heat oil in pan. Remove chicken from marinade and cook 2–3 minutes per side, until golden brown and cooked through. Let rest, covered loosely with foil, for 5 minutes.
  6. Warm pita or flatbread. Place salad along the middle of bread, top with sliced chicken and tzatziki. Roll up, optionally wrapping in parchment to hold together.
